One of the fastest preparations for this drink is simmering on the stove. To prepare it, you need to take fresh milk and pour it into an enamel container. Then you need to boil it, and after that turn the fire to the minimum possible.

The milk should simmer for three hours. During this time, you will need to remove the foam that gradually forms on the surface. You can tell if milk is ready by its color. If it becomes creamy, it can be removed from the stove.

In a pressure cooker

You can prepare baked milk in a pressure cooker very quickly; it only takes half an hour. To do this, you will need to place it on the stove and seal it hermetically. It is also better to store the product in the refrigerator.


In the oven

As mentioned above, previously baked milk was prepared in real ovens. Today they have been replaced by gas and electric ones. You can prepare both regular and fermented baked milk in them. This is done simply - the product is placed in the oven and simmers there for several hours. Here are the main ways to prepare such a product.

Pickled

To prepare fermented baked milk in the stove, you first need to pour three liters of fresh milk into an enamel pan and put it on the stove. Bring the drink to a boil over medium heat, but be careful not to let it boil.

Before doing this, be sure to preheat the oven to ninety-five degrees. Then you need to put the heated milk in it, leaving it there for three and a half hours. During this time, this product will become concentrated and fragrant. A crust will appear on it, the drink will acquire a brown tint, and the room will be filled with aromas.

The finished product needs to be removed from the oven and cooled slightly. Then you need to remove the crust from it and cut it into small pieces. Separately, you need to combine half a liter jar of thick sour cream and a little baked milk. The result should be a thick and viscous mixture. It must be added to the pan with milk and stir everything well.

After this, you need to pour the still warm product into glass jars and add a few pieces of milk crust to each of them. When approximately four hours have passed, the milk should sour. The jars will need to be covered with tight lids and placed in the refrigerator. Within an hour you can drink fermented milk.


Regular ghee

Fresh milk should be placed on the stove and heated until the first bubbles appear. After this, it must be poured into a clay dish: it is better if these are baking pots. They can be placed either on a baking sheet, or simply on a wire rack and covered with foil. This drink can be simmered for three to six hours. From time to time everything will need to be stirred so that the foam settles to the bottom.

Clay dishes will not only help heat the milk evenly, but will also prevent it from burning. Even if the temperature is high, the spun milk will not be able to “escape”. When it is ready, it will need to be cooled and placed in the refrigerator.

Baked milk can be an excellent basis for everyone’s favorite fermented baked milk. To do this, only the prepared milk needs to be poured into small jars. Then you need to wait until it cools down to forty degrees. If you don't have a special thermometer at home, you can check the temperature with your finger. To do this, you need to dip it in milk: if it’s not hot, then you can make sourdough.

Then you need to add one tablespoon of thick and fatty sour cream to each of the jars. Then you need to mix everything very carefully and cover the top with lids. All jars must be wrapped warmly and kept for up to eight hours. After this time, you can remove the jars from the heat and begin tasting.
