If the seeds have been removed beforehand, it is not necessary to make minced meat using a blender or meat grinder. Pieces of herring can be finely chopped with a knife.

Any recipe for herring cutlets can be easily varied with various additives. Usually onions and eggs are added to fish meat. They put more onions than in meat cutlets. You can do without eggs, using crumbled bread, boiled or raw grated potatoes, other vegetables (cabbage, zucchini, pumpkin), soaked cereals (oatmeal, semolina, pearl barley) or thick porridge (rice, millet) as a binder.

For fresh herring cutlets, fresh frozen fish will do. Slightly thawed carcasses are easier to cut - cut off all the bony parts. But before preparing the minced meat, the herring is thoroughly thawed, washed and wiped with napkins, removing excess liquid.

Recipe for herring cutlets with potatoes

For 2 medium-sized herring:

  • potatoes - 4-5 medium sized tubers
  • egg - 1-2 pcs.
  • onion - 1-2 pcs.
  • garlic - 3 cloves
  • milk*
  • salt - to taste
  • breadcrumbs
  • frying oil
  • spices - optional

Add finely chopped onion and garlic to the minced herring.

Grate the potatoes on a fine grater. Squeeze into a cup.

*Pour into the grated potato mixture the same amount of milk as the volume of the squeezed liquid.

Place potatoes and egg into the herring mince. Salt, pepper, add your favorite spices. Mix evenly.

If you have time, keep the minced meat in the refrigerator for 2-3 hours. You can immediately form cutlets, roll in breadcrumbs and fry in a small amount of oil. First, fry both sides until golden brown. Then reduce the heat and keep the cutlets on the stove for another 10-15 minutes so that the middle is well baked.

Recipe variations:

Instead of potatoes, add boiled rice or oatmeal soaked in milk. The mass of additives can be 1/2 or 1/3 of the volume of minced fish.

Fresh herring cutlets with semolina

For 1 kg of herring

  • eggs - 3 pcs.
  • onions - 3 pcs.
  • semolina - 3-6 tbsp. l.
  • ground pepper, salt - to taste
  • bread crumbs
  • frying oil

Place finely chopped (or twisted) onion, eggs, salt and pepper into the minced herring cutlet. It is advisable to beat the eggs well first.

Add semolina in a thin stream, stirring until smooth. Be sure to let it sit for half an hour so that the semolina swells. Then the cutlets will be airy.

The minced meat will be runny. Don't thicken it with flour. The cutlets will be tough. It’s easier to dip the minced meat into breadcrumbs with a spoon and roll it into a cutlet shape. Fry in oil. Or do without breading, putting the minced meat in a frying pan like dough for pancakes.

Note:

If there is caviar inside the fish, it is beaten together with eggs and placed in the minced meat. Or they are twisted in a meat grinder together with fish.

Recipe for herring cutlets with bread

Ingredients per 1 herring:

  • onion - 1 pc.
  • egg - 1 pc.
  • bread - 3 pieces of white loaf
  • salt to taste

Deboned herring with onions and bread are ground in a meat grinder. The cutlets will be more tender if you keep the pieces of loaf in water for 10 minutes before chopping.

  • lard – 300 grams;
  • chicken egg - 1 piece;
  • vegetable oil – 100–120 milliliters;
  • salt and ground pepper to taste.


First you need to peel the onions and chop them finely. Chopped onions and pre-chopped pieces of fish must be passed through a meat grinder to obtain the initial component for herring cutlets - minced meat.

Add a chicken egg and spices to the resulting fish mass, and then mix the resulting mixture thoroughly. As a result, a mass should be formed that is homogeneous in its structure.

Now you need to let the minced meat brew. To do this, cover the container in which it was prepared with plastic wrap or a lid (if it was a pan) and put it in the refrigerator for half an hour. After the specified period of time has passed, it is necessary to begin the actual preparation of the cutlets.



Having previously moistened your hands with water so that the ground minced meat does not stick to the skin, you need to form neat round blanks for future cutlets.

  • fresh herring – 500 grams;
  • oatmeal – 300 grams (it is advisable to use an instant product);
  • chicken egg - 1 piece;
  • onions - 2 medium heads;
  • potatoes – 200 grams;
  • vegetable oil;
  • salt and pepper to taste.



Pre-prepared fish must be ground into minced meat using a meat grinder. You also need to grind instant oatmeal into flour using a coffee grinder (you can immediately use oatmeal). In addition, you need to peel, rinse under running water and finely chop the onions and potatoes. Moreover, it is advisable to grate the potatoes using a grater.

Ingredients:

  • fresh herring fillet – 480 g;
  • instant oat flakes – 280 g;
  • large chicken egg - 1 pc.;
  • onions – 120 g;
  • raw potatoes – 220 g;
  • iodized salt – 10 g or to taste;
  • ground pepper - 2 pinches or to taste;
  • Unscented sunflower oil – 120 ml.

Preparation

Grind the fresh herring fillet in a meat grinder, first cutting it into small pieces. Grind most of the flakes into flour using a coffee grinder, and grind the rest into larger crumbs. We will use it for breading products. We peel the onions and chop them very finely into cubes, and grate the peeled potatoes on a fine grater.

Mix the twisted herring fillet, onion mass and oatmeal in a bowl, add potatoes and egg, season the mass with salt and pepper and mix. Let the minced meat sit for ten minutes, after which we proceed to decorate the products. With moistened hands, form cutlets, bread them in oatmeal crumbs and place them in heated sunflower oil without aroma.

Ingredients:

  • fillet – 420 g;
  • milk – 220 ml;
  • white bread – 120 g;
  • large chicken egg - 1 pc.;
  • onions – 120 g;
  • raw potatoes – 120 g;
  • sour cream – 30 g;
  • – 120 g;
  • iodized salt – 10 g or to taste;
  • ground pepper - 2 pinches or to taste;
  • Unscented sunflower oil – 120 ml.

Preparation

Cut the salted herring fillet into slices, add milk and leave to soak for one hour.
