After all, many recommendations are universal and tell not only how to make blackberry jam, but also how to make jam in general, from any fruit and berries.

The first recipe is called “quick” or “five-minute”. This is how raspberries, strawberries, wild strawberries, currants and other small berries are prepared. The raw materials must be of good quality, preferably a little unripe, without spoiled specimens. Blackberries are quite tender, so as soon as you pick them from the bush, put them into processing. Do not wait for the product to become succulent. This especially applies to how to cook blackberry jam in 5 minutes. If the berries spoil, such preservation will not be stored for long. Therefore, sort them out, pour them into a colander, and rinse them in running water. The preparatory work is now complete. Let's start cooking.

Cook for 5 minutes

Wide copper basins, brass or stainless steel, are best suited for jams, marmalades and marmalades. In addition, you can use ordinary cast iron or cauldrons. But enamel pans are not suitable, as berries and fruits burn in them. How to make blackberry jam? Pour the berries into a cast iron or basin and cover them with sugar at the rate of 1 to 1.5. Thus, for every kilogram of berries there is one and a half granulated sugar.

At first, of course, half the norm will be enough. Sugar is necessary for blackberries to release juice. Cover the cast iron and place it in a cool place for 4-6 hours, from night to morning. Then add the rest of the sugar and place the cast iron on the stove over high heat. When the jam boils, reduce the heat to low and cook the berry mass for exactly 5 minutes, stirring. Then, straight from the stove, pour it into dry, sterilized jars and seal. Turn the jars upside down, cover and leave to cool for a day. Then take it to the cellar. You can make such delicious blackberry jam in just 5 minutes! Not difficult, right? By the way, it is not necessary to roll it with tin lids - you can also close it with ordinary plastic ones. In this case, only the jars should be stored in a cool, dry room or on refrigerator shelves.

Assorted jam

In particular, assorted raspberries and blackberries. Not only does it taste amazing, but the aroma is divine. And preparing the delicacy is also quite simple.

Ingredients: 1 kg of each type of berry and one and a half to two kilograms of sugar. What should you do? Of course, sort through the raw materials, sort out the unusable specimens, and rinse them in water. Then transfer the berries to a cooking bowl, sprinkling them with sugar. Place in a cool place to release the juice. And after 6-8 hours, start cooking over low heat first so that the sugar dissolves well. Then make it larger and let the berries boil well. Stir with a wooden spatula to prevent the raw materials from burning. Cook the raspberries and blackberries over fairly high heat for half an hour, skim off the foam and scum. Pour cast iron jam into prepared jars and seal. This cooking method is also fast.

Original jam

Here's another interesting recipe for making blackberry jam. Surely many housewives will like it. The peculiarity of the preparation is that, in addition to berries, blackberry leaves are also taken as raw material. Ingredients for jam: 1 kilogram of sugar and blackberries and 100 g of leaves. And also half a liter of water and 5 g of acid - citric or ascorbic. Make a decoction from the leaves and water. Cooking time - 20 minutes. Next, add the acid and put it on the boil, pouring in the rest of the leaf infusion. The process should last 15-20 minutes. After this, transfer to sterilized jars and close. This jam is distinguished not only by its special pleasant taste. It is also very healing and restores strength.

Raw "assorted"

This jam can be made only from blackberries, but it will be more appetizing and healthier if you take equal parts of strawberries, raspberries, blackberries, honeysuckle or currants. The main thing is that for 1 part of berries there is one and a half to two parts of sugar.

Sort the freshly picked fruits so that there is no debris, leaves, or sepals. Rinse the strawberries and honeysuckle and let the water drain. Raspberries and blackberries do not need to be washed. Pour sugar over the berries, mix, place in jars, and screw. Store canned food in a cool place.

» Blackberry

Blackberries can be forest or garden, just like raspberries, which they resemble in appearance and in the way they grow. Differences include blue color, sour taste, weaker aroma and smooth skin. The berry is unpretentious, ripens from the end of June. The last berries on the bushes can be found at the end of September. Thanks to such a long fruiting period, blackberries can be prepared for the winter with strawberries, gooseberries and even Antonov apples. In this article we will take a closer look at what can be done with blackberries.

Berry acid is incompatible with aluminum and steel, so we use a wooden (not painted) spoon or spatula to stir the berry mixture.

Jam

Jams are prepared using applesauce. Considering that most of the berries are harvested in the summer, you will have to use summer varieties of apples to make blackberry jam. They are sweet, which means you will need less sand, ≈ 500-600 g. per 1 kg of fruit and berry mixture.

  1. For 3 kg of apples required 1 kg of berries blackberries.

Compote with blackberries

The peculiarity of preparing blackberry compote is that it does not need to be boiled. The most acceptable way to pour sugar syrup over berries. This allows you to maintain the shape of the berry. When cooked, it will simply fall apart, bones will settle at the bottom of the pan, and the pulp will turn into an incomprehensible shapeless mass. You'll have to strain the compote.

Preparing compote in a jar does not require additional manipulations - the berries will not lose their shape. An additional advantage of this preparation is that the compote, closed with a lid, will be stored longer. This means that you can prepare it for future use. For long-term storage of sand you will need a little more.

Summer compote

Calculation of products for a 3-liter jar

  • Blackberries – 2 cups;
  • Granulated sugar – 1 cup;
  • Water – 3 liters.

The berries are poured into a jar. A filling is prepared from water and sugar. Fill the jar with boiled syrup and cover with a lid.. As it cools, the compote will acquire a uniform color and taste.

Pure blackberry compote has a pleasant aroma; the taste requires the addition of raspberries and red currants. The flavor bouquet will become much richer.

Blackberry juice

The berry practically does not lose any taste or vitamins during shock freezing. It contains less vitamin C than cranberries, but drinking juice from this berry also helps with a severe cold. It is better to freeze berries in special bags that have fine perforations on one side.. Washed and dried berries are placed in containers or bags and sent to the freezer. If you can’t dry the berries, then you can sprinkle them with granulated sugar. Depending on how the berries were frozen, the method of their further use depends.

Sugar-free berry juice is prepared as follows:

  • Sand is poured into boiling water at the rate 2 tablespoons per 1 liter of water.
  • After the granulated sugar has completely dissolved, Place a colander or sieve on the pan so that water gets inside it.
  • Berries are poured into a colander. They should warm up and release juice. For quick cooking, you can stir them with a wooden spoon. Blackberries in boiling water quickly release juice, but you can crush the berries a little when stirring.
  • The colander has wide holes, so fruit juice should be strained. When using a sieve, this preparation step is eliminated.

Berries frozen with sugar will have to be boiled in a saucepan. Then strain through a sieve or through 2 layers of gauze placed in a colander.

Kiseli

  • 1.5 liters of water;
  • 100-150 gr. blackberries.
  • 2 -3 tbsp. sugar or honey
  • A pinch of salt.

The preparation of medicinal jelly begins in advance.

  1. The oatmeal should be soaked for 6-8 hours. in full volume of water.
  2. The resulting liquid is poured into a saucepan. The remaining grain can be squeezed out through a strainer, but its hard parts should not fall into the ladle.
  3. The jelly base is heating up. Honey blooms in it. If sugar is chosen for cooking, then it and salt can be added at any stage of preparation.
  4. Into the boiled hercules decoction crushed berries are added or juice squeezed from them.
  5. The mixture is brought to a boil, the gas is reduced to a minimum. You can move the saucepan to the sauce burner for simmering. The purpose of simmering is to evaporate excess moisture and allow the dish to thicken.
  6. You'll have to eat this jelly with spoons, so To cool, it is better to pour it into plates, immediately dividing into small portions.

Quick jelly

  • 1 liter of water;
  • 3 tbsp. l. potato starch;
  • 250-300 gr. blackberries;
  • Granulated sugar to taste.

Cooking method:

  1. In warm, not boiling water, using a sieve, starch is added in small portions. It is necessary to bring the water to a boil with constant stirring so that the starch does not settle to the bottom of the pan and form clots.
  2. Sugar and berries should be on hand so that during the cooking process not for a second don't stop stirring.
  3. Berries are added to the boiling starch base. It is better to rub them into jelly through a sieve or replace them with freshly squeezed blackberry juice.
  4. Sugar is added along with the berry raw materials.. After boiling, the jelly must be removed from the heat. Prolonged boiling will only worsen the taste.

Desserts with blackberries

Drinks, cocktails, yoghurts with the addition of blackberries tone up no worse than those containing lemon balm. But these two components combine well with each other.

Yogurt

  • 0.5 liters of kefir;
  • 7.5 g vanilla sugar;
  • 2 bananas;
  • 0.5 cups blackberries;
  • A pinch of ground cinnamon;
  • A sprig of lemon balm.

The bananas are broken into pieces and placed on the bottom of the mixing bowl. The remaining ingredients are added. Until a homogeneous mass is obtained, the mixer starts at first speed, only after which the whipping function starts.

Mousse

Traditionally the mousse is prepared with strawberries or raspberries. Blackberry mousse will be more sour with a less pronounced taste. The berry harmonizes well with both strawberries and raspberries. When using all three ingredients, the dessert will be more tasty and aromatic. To prepare the mousse you will need:

  • 3 egg whites;
  • 1 cup granulated sugar;
  • 0.5 kg of berries.

Separate the whites into a beating glass, add a little sugar and start beating. The rest of the sugar is added gradually. The result should be a thick mass, like for baking “meringue”. Add the berry mixture in small portions and beat until smooth. Although, small pieces of berries will not spoil the dessert. Before serving, the mousse must be cooled, placed in bowls or tall glasses, and garnished with whole berries and a sprig of mint.

Sorbet

Sorbet is a dietary, lean ice cream, it contains no animal fats, and the amount of sugar is kept to a minimum. To prepare it you will need:

  • 3 cups blackberries;
  • Juice of one orange;
  • 100 gr. honey.

All ingredients are pureed in a blender until smooth, which is sent to the freezer until completely frozen. Before serving, balls are formed from the mixture using a heated tablespoon and placed in a bowl.

As decoration you can use almonds or walnuts, grated chocolate. The use of fruit syrup for this type of ice cream is unnecessary, and whipped cream will perfectly complement the treat.

Alcoholic sorbet

Alcohol does not freeze well, so to make sorbet you will need to dilute it with water. Blackberries harmonize well in taste with almonds and cherries. Based on this, we choose the liqueur. Proportions:

  • 300 gr. blackberries;
  • 30 ml liqueur;
  • 50 ml vodka;
  • 100 gr. granulated sugar;
  • 1.5 teaspoons lime juice.

Cooking method:

  1. Pour berries and sugar into a saucepan. Cook until smooth.
  2. Pass the berry mixture through a sieve so that the seeds do not get into the ice cream.
  3. Chilled Mix berry puree with remaining ingredients, send it to the freezer.

Alcoholic sorbet will not be hard. To spread it into bowls, you don’t need to heat the spoon. For decoration, you can use chopped nuts, chocolate or cherries, which will help emphasize the taste of the liqueur chosen for dessert.

To prepare this delicacy you will need quince. It will act as a gelling agent. This will give a longer shelf life than when preparing a gelatin-based dessert. In this recipe, 1 kg of berries and quinces will require 600 g. sand

Cooking method:

  • Peeling the quince, grate the pulp.
  • Add berries. Quince 1/3, berries 2/3. Add sugar to the mixture and leave for several hours to release the juice.
  • Bring to a boil, cook until the quince pieces begin to disintegrate.
  • Wipe the puree through a sieve.
  • Preheat the oven to 170°. Reduce gas to minimum.
  • Line the baking tray foil.
  • Apply an even layer of 1.5-2 cm to the foil spread the puree.
  • Place in the oven. Preparation can take from 8 to 16 hours. The idea is to evaporate excess moisture.
  • The finished layer is sprinkled with a thin layer of potato starch, turns over, processed from the second side.
  • Cut into slabs, placed in a plastic container and put in the refrigerator.

If quince is not available, it can be replaced with apples. The amount of sand in a dish is determined by the acidity of berries and apples. By using sweet apples, the amount of sugar can be reduced.

Baking with blackberries

You can bake an open-faced blackberry pie using yeast dough. There are no special problems when using jam, but jam or raw berries mashed with granulated sugar will definitely boil and flow. Therefore, we choose a deep form so that the sugar syrup does not burn in the oven. After baking, the pan must be removed and the cake allowed to cool so that the jam thickens again. Only after this can the cake be removed from the mold.

Making a pie with berry filling is also inconvenient because the dough itself, when wet, does not bake and does not increase in volume. To reduce wetness, apply a layer of potato starch under the jam or berries.. This method of baking is common, but very time-consuming. Yeast-free treats are prepared faster.

How to make thick blackberry jam with whole berries at home

If you pay attention not only to taste, but also want to get the most healthy product possible, it is preferable to use wild berries rather than garden ones, despite the fact that they are smaller and less juicy. When making berry jam from blackberries with seeds, it is important to preserve the integrity of the berries. At the same time, numerous seeds in blackberries do not spoil its taste. Jam from garden blackberries with seeds is prepared in the same way as from wild berries. Jam made from wild blackberries with seeds is more aromatic and thicker. The best jam is made from freshly picked berries.

If you buy berries, keep in mind: in order for the berries to remain intact and the jam to be tasty, the original product must consist of ripe and undamaged berries. The berries should look dry. If the berries are wet, it means that there are many damaged ones among them. Such blackberries turn sour very quickly and lose their nutritional value.

First of all, you need to sort through the berries in order to remove everything unnecessary - random leaves, twigs, berry tails, damaged berries. Then the blackberries need to be washed and allowed to drain. You can make a delicious compote from mashed blackberries, or grind them with sugar.

For making blackberry jam, nickel-plated or enameled dishes without chips or damage - a basin or a wide saucepan - are well suited.

After transferring the prepared berries into the bowl in which the jam will be cooked, they must be covered with granulated sugar and left for 1-2 hours so that the berries release their juice.

When the granulated sugar takes on a pinkish-purple hue, the bowl with the future blackberry jam must be placed on low heat until the sugar is completely dissolved. In this case, it is necessary to ensure that the granulated sugar on the bottom of the dish does not burn. To do this, you need to periodically lightly shake the bowl with a mixture of blackberries and sugar. If you want the blackberry jam not to be very thick, then before putting the bowl with the mixture on the fire, you can add 50 g (a quarter cup) of water. This entire process will take about 10 minutes.

After the granulated sugar has completely dissolved in the blackberry juice, remove the dishes from the heat and allow them to cool. This may take no more than an hour. But if you are busy, you can start further cooking the blackberry jam a little later.

Next, the blackberry jam preparation must be placed on high heat for 15-20 minutes. This allows you to get blackberry jam with a bright, rich color. But at the same time, it is important to ensure that it does not burn and that the blackberries remain intact and do not fall apart. To do this, the jam must be stirred lightly from time to time so that the berries are evenly distributed in the bowl. The abundant foam that forms during the cooking process can be left in place. By the end of cooking, its quantity will greatly decrease. When you lightly shake the bowl with jam, the remaining foam will collect on the surface of the jam in the middle, then it can be easily removed with a slotted spoon.

You can determine the readiness of blackberry jam with whole berries in the following way: you need to drop some syrup onto a plate and wait for the drop to cool. If the jam is ready, the drop on the plate will not spread.

.

If the drop spreads when you slightly tilt the plate, it means the jam is not ready yet.

How to sterilize jars for storing blackberry jam

While the jam is being cooked, or beforehand, you need to prepare jars for storing it. The easiest way to sterilize jars can be done using a regular kitchen kettle. Carefully treat the inside of well-washed jars with hot steam coming from the spout of a boiling kettle. Fill the lids of the jars with boiling water and keep on fire for 10 minutes. After sterilization, place the jars and lids upside down on a dry towel.

The finished jam is poured hot into prepared, sterilized, warm jars. The jars of jam are quickly and tightly closed with a lid.

As it cools, the jam should thicken. To strengthen the tightness of the lid, which is important when storing jam until winter, the neck of the jar along the edge of the lid can be additionally wrapped with a ribbon of ordinary stationery tape. After cooling, the blackberry jam is placed in a cool place.

How to make blackberry jam: recipes with photos

Blackberries are not only used as the main ingredient for jam, but also frozen. The tasty berry is extremely healthy due to its composition, which includes many vitamins (C, B, PP, K, E), organic acids, minerals and pectin, tannins, fiber and other components. Therefore, blackberries become indispensable in winter, when the body does not have enough microelements to fight diseases. The berry copes well with colds, lowers fever, alleviates pneumonia, improves immunity, and strengthens blood vessels.

The first step in preparing delicious jam will be the correct selection of berries and their preparation. It depends on what kind of jam you end up with. The season for blackberries to appear in large quantities is at the end of August, at which time you can buy a lot of berries at a not too high price. A few rules for selecting and preparing a product for winter preparations:

  • When choosing berries, give preference to ripe, firm fruits. Softened, beaten blackberries are also suitable if you want to make a liquid jam that involves chopping them.
  • Take only ripe fruits. Unlike some other berries, blackberries cannot ripen at home. Jam made from prematurely harvested fruits will turn out sour.
  • Before starting cooking, thoroughly treat the berries to remove any adhering debris, leaves, or dust. Then wash the product under the kitchen shower; this spray of water will not damage the structure of the blackberry. You need to remove the ponytails after cleansing with water. Do this in gentle circular motions to avoid damaging the surface of the blackberries.

A separate important step should be the sterilization of the jars, thanks to which the jam will retain all the beneficial substances and will not spoil. To do this, take glass containers of a suitable size, fill the pan with water, boil it, and place a wire rack on it. Place the jars on top. Leave for fifteen minutes while they are sterilized by steam. The lids also need to be sterilized before twisting the jam. Below you will learn several interesting recipes for preparing a delicious delicacy for your home table.

  1. Place frozen berries in a saucepan. Sprinkle them with sugar and let them sit for several hours. The berries should melt and the sugar should dissolve. The blackberries and strawberries will release a lot of juice, so scoop out about a third of the cup.
  2. Add a little lemon juice to the resulting mass. Thanks to it, the jam will acquire a pleasant sourness.
  3. Place the pan on low heat and wait until the berry mixture boils. After boiling, turn up the heat and cook for about five minutes.
  4. Please note that the pan must have high sides. This is due to the peculiarity of such jam during production: during a five-minute boil over high heat, the mass rises high, reaching almost the very edges of the container. To prevent the jam from leaking out, it is better to use a deep pan.
  5. Let the mixture cool. Transfer to a selected container. If you eat it in the near future, you may not need to roll it up. The delicious product is ready!

  3. Let the mixture cool. Take a sieve and press the still warm berries through it. This is necessary in order to get rid of the seeds, which will make the jam crispy.

Frozen strawberry and blackberry jam in 5 minutes

If you didn’t have time to make jam for the winter, then it doesn’t matter, it can be made as needed from frozen berries, and not just strawberries. In general, I came up with the idea that during the berry season it is not necessary to stand at the stove for days, cook jam, wash, sterilize jars (you also need to find them in large quantities).

You can buy a large freezer and just freeze all the berries in bags, then in the winter you get a batch of berries, make jam, and when it runs out, make more. I will most likely do this next season, but for now I’m making jam from store-bought frozen strawberries with the addition of blackberries.

In general, this jam cooks very quickly, this recipe for strawberry jam takes five minutes. One caveat - frozen berries give a lot of juice when they thaw, so if you boil the jam for only 5 minutes, it will remain liquid.

Options: 1 . You can also eat something that’s a bit runny, my husband loves it. 2. You can boil it two or three times for five minutes (after each boiling, the jam is cooled). 3 . You can drain off a little excess juice before cooking - I usually do this and then after 5 minutes of boiling the jam will thicken normally.

Ingredients for making frozen berry jam

For that, to make jam from frozen strawberries and blackberries in 5 minutes I needed:

frozen blackberries - 0.5 kg.

sugar - 1 kg (or a little less)

lemon juice - 2 tbsp.

Recipe for making Five-Minute jam from frozen strawberries and blackberries

I put frozen berries (strawberries and blackberries) in the pan.

I covered the berry with sugar and left it for 2-3 hours so that the berry melted and the sugar dissolved.

Here you can see that the berry has released a lot of juice; about a third of the glass can be scooped out.

First put the pan on low heat and brought the mixture to a boil. As soon as the strawberry jam boiled, I turned the heat on high and cooked for exactly 5 minutes.

Take a larger pan, as the jam rises a lot, almost to the edge of the pan. The trick is that it should boil for 5 minutes, but over high heat. I don't clean the bake.

It is better to cool the finished jam, transfer it to a jar and put it in the refrigerator.

Here is one option for making jam from frozen strawberries or other berries. If you have any advice, I'd be glad to learn something new.
