Rinse the beef tenderloin and dry with napkins. Cut into small slices, removing films and veins. Place the meat in a deep bowl.

Peel and wash the bulbs. Chop them into half rings. Add onion to beef. Season everything with freshly ground pepper and pour in soy sauce. Sprinkle with sesame seeds. Mix well, cover with a lid and leave to marinate for four hours.

Combine soy sauce with mustard, rice vinegar, a spoonful of olive oil, honey and mustard in a deep bowl. Finely chop the peeled garlic cloves and add to the rest of the ingredients. Stir. Place beef slices into the marinade, stir well and marinate for forty minutes.

Peel the onions and carrots. Remove the seeds from the bell pepper pod and remove the stalk. Wash and dry the vegetables. Chop the onion into thin feathers. Grind the bell pepper into thin strips. Cut the carrots into circles using a curly knife.

Place the onions and carrots in the heated olive oil and fry them, stirring regularly, for five minutes. Now add the bell pepper and cook for a couple more minutes.

Place the beef slices in a hot, dry frying pan. Fry over high heat for half a minute on each side. Place a layer of roasted vegetables in a baking dish. Place beef slices on top.   3. Chop the onion and garlic.

  4. Fry the onion and garlic in vegetable oil until transparent. Fry over high heat, stirring constantly.

  5. Add our marinated beef along with soy sauce to the onion and mix. Fry over high heat for 15-20 minutes, during which time the meat should release its juices.

  6. Cover the meat with a lid and simmer for another 10 minutes over low heat. If necessary, you can add a little water if you want the meat to have gravy.

  7. You can optionally add 2 more tablespoons of sour cream, but it is not necessary.

  8. Cooked beef in soy sauce can be served with anything: mashed potatoes, pasta, noodles, rice, buckwheat, etc. Please note that if you cook with old beef, it will still not cook for more than 30 minutes, otherwise it will simply fall apart . You can cook pork in the same way.

- fresh ginger (root) – 5-6 cm or 1.5-2 tbsp. l. grated;
- garlic – 3-4 large cloves;
- ground chili pepper – 1 tsp;
- freshly ground black pepper – 1.5 teaspoons;
- vegetable oil – 3 tbsp. spoons;
- soy sauce (thick, not very salty) – 3 tbsp. spoons;
- salt (if necessary) - to taste;
- sesame seeds, fresh and pickled vegetables - for serving.

How to cook with photos step by step




Using a sharp knife, cut a piece of lean beef into long strips. We cut only along the grain - pay attention to this point! If you cut across the grain, then when frying and stirring, the meat may flake and split into small pieces.




Place the long strips of meat in a small but deep bowl. If the soy sauce is not very salty, add some salt to the beef to taste. Grind black peppercorns in a mortar and add to the meat. Add ground chili (or not, it’s a matter of taste).




Three peeled cloves of garlic on the finest grater. Or we pass it through the garlic press and then crush it in a mortar to make a viscous paste.






Cut off the skin of the ginger root in a thin layer. Three ginger on the same grater as the garlic. If you don’t have a fine grater, then cut the ginger into thin slices, then chop it with a knife as finely as possible. Add chopped ginger to beef with spices.




Mix everything with your hands. Pour in the required amount of soy sauce. Mix everything again, this time with a spoon or fork. The sauce should get onto each strip of meat. Cover the meat with film or a lid (be sure to seal it) and put it in the refrigerator. Overnight or 6-8 hours - whatever happens. Before frying beef, think about what side dish it will be served with. If you decide that you need a salad, then make it in advance, the meat cooks very quickly, you won’t even have time to chop the tomatoes. Pour half the required amount of oil into a deep frying pan. Heat it up until it almost smokes. Reduce heat to medium. We lay out the meat and immediately start stirring it. If you don't stir, everything will stick together into one big piece or start to burn. By stirring, the pieces of beef will separate from one another and cook evenly.







Fry the meat for a few minutes, then add the remaining oil and fry until done. If you pour out all the oil at once, it will splatter (because of the sauce), but it will remain in the pan and the beef will not dry out. In total, frying will take 5-7 minutes, provided that the meat is thinly sliced.

  • sesame oil;
  • natural honey – 1-2 tbsp. spoons;
  • coriander and fennel seeds (ground);
  • sesame seed;
  • various fresh greens (parsley, basil, cilantro).

Preparation

You can keep the meat in the freezer for 40-60 minutes to make cutting easier. Cut the meat across the grain into thin short strips.

Prepare the sauce. Finely chop the garlic and red hot pepper with a knife. Chop the peeled ginger tuber into thin short strips. Mix, based on your taste, soy sauce, honey and lemon and/or lime juice (can be replaced or combined with natural fruit vinegar). Add a little sesame oil and ground spices. Mix all sauce ingredients.

Place the chopped meat in a tight container and pour the sauce over it. Stir and leave for 2-8 hours in a cool place. Stir occasionally. During the marinating process, the meat is fermented and, in some way, changes its structure.

When the meat, in your opinion, has been marinated enough, prepare the rest. Cut the onion into thin rings or half rings and the sweet pepper into strips. Place onions, peppers and meat on a plate, decorate with herbs, sprinkle with sesame seeds and serve. This dish is well served with rice, fresh pears or plums, tomatoes, rice wine (Mirin or Shaoxing), rice vodka, and fruit wines.

If you are not ready to eat raw beef in soy sauce, you can cook fried beef, pre-marinated in soy sauce.

Fried beef with soy sauce

Ingredients:

  • beef steaks – 3-4 pcs.;
  • garlic – 2-5 pcs.;
  • hot red pepper;
  • ground black pepper;
  • cloves – 3-5 buds;
  • dry Madeira;
  • soy sauce;
  • vegetable oil or lard;
  • green onion;
  • various fresh herbs (parsley, basil, cilantro, rosemary).

Preparation

Prepare the sauce. Finely chop the garlic and red hot pepper. Mix Madeira with soy sauce. We break the clove buds or grind them with a hand mill. Mix it all and pour the marinade over the steaks. Marinate for at least 2 hours. Dry the meat with a napkin and fry in a frying pan over high heat. The degree of roasting is low or medium.

Serve with green onions and Madeira. You don't have to fry steaks, but... wrap in foil and bake. To brown, unwrap the foil halfway through. Baking time - at least 40 minutes at a temperature of about 200 degrees C.

We prepare beef stewed in soy sauce using the same ingredients for the sauce as in the previous recipe (see above), only instead of steaks we use meat for goulash or azu. First, marinate the meat in the sauce, and then simmer with onions in a cauldron or frying pan, adding water if necessary.
